Holyrood Distillery is a small craft distillery located in a historic building in the heart of Edinburgh. It was founded in 2019 by David Robertson, who has over 30 years of experience in the whisky industry.
Holyrood Distillery is known for its innovative approach to distilling. The distillery uses a variety of unique techniques to create its spirits, including a hybrid pot still and a continuous still. The distillery also uses a variety of different casks to mature its spirits, including ex-bourbon, ex-sherry, and ex-wine casks.
One of the distillery’s most popular products is its Holyrood Single Malt Whisky. This whisky is made with 100% malted barley and is aged for at least three years in ex-bourbon casks. The first release of their whisky was in 2023. It is a smooth and fruity whisky with notes of vanilla, honey, and citrus fruit.
Holyrood Distillery also produces Holyrood Gin. Made with a blend of juniper berries, coriander, angelica root, and citrus peels, it is a fresh and citrusy gin that is perfect for making gin and tonic cocktails.
In addition to its whisky and gin, Holyrood Distillery also produces a variety of other spirits, including vodka, rum, and liqueurs. The distillery also offers a variety of seasonal and limited-edition spirits.
